By Special Request / Stuffing Recipe

Here is recipe, such as it is, for the whole grain stuffing I mentioned in my Happy Easter post:

Harvest’s Multi Grain Turkey Stuffing:

First – the gain mixture

1 cup brown rice
1/2 cup red winter wheat - whole
1/2 cup pearled barley
2 cups water

Brought all to boil on high heat, turned down to medium and boiled until most of the water was absorbed and then turned down to low until the rest of the water was absorbed. How long did it take? Haven't got a clue - just keep an eye on it.

Then I let that cool for a few hours.

Next the fruit, veggies, and herbs – all fresh:

Peel, core, and dice one crisp apple. Wash and dice two stalks of celery with their leaves. Chop two handfuls of the fresh leaves from garland chrysanthemum, one handful of sweet Cecily, 5 long sprigs of green onions and the same of chives, plus the leaves from several sprigs of thyme, oregano, and lemon balm, and about 5 leaves of fresh sage.

I then mixed about half the cooled rice mixture with all that green stuff listed above. Salted it to taste and stuffed it into the turkey - both the croup and the cavity - stuffed it in as tight as it would go. It all fit - but I only had about a 9 pound bird.

I have to tell you it came out really dang good too . . . It is more sweet than savory with the apple and all the sweet Cecily. Onions, garlic, and rubbed sage instead of the sweet Cecily and the apple would make a more savory stuffing.

I got this wild idea to take the rest of the grain mixture, put it in the food processor with some brown sugar, baking powder, tinch of salt, and more of the sweet Cecily - I got tons. Whiz that all together and bake it until it hangs together a bit and call it desert . . . we shall see . . .

I just checked and I don't have any more sweet Cecily seeds - but I should this summer. It is so wonderful - sweet and mild and anise flavored . . .

    I think I could really enjoy that stuffing recipe. When I think of stuffing, I think of mushy bread, but as tis doesn't call for any bread, it sounds yummy.

    I am allergic to yeast - so bread is out of the question. Tonight I pulled a giant scallion from the garden - as big as a leek. The green part I chopped up and mixed with cooked rice, about half and half, added a little salt and stuffed it in a chicken. The rest of the leek-scallion went in the pan in 3 inch legnths with carrots, parsnips, and potatoes. The stuffed chicken actually went in the pan first and the veggies around it. Yummm . . . I was surprised that the stuffing turned out pretty sweet tasting . . .
